What Are Liege Waffles and How Do You Cook Them?

Liege waffles are a type of waffle which are made with pearl sugar. (See below to find out about pearl sugar.)  Liege waffles are denser and sweeter than traditional Belgian waffles, and the sugar embedded in the dough caramelizes as it bakes, giving the Liege waffle a crispy crust.

2. 1/4 cup sugar

3. 1 teaspoon active dry yeast

4. 2 eggs

5. 1/2 teaspoon salt

6. 3/4 cup butter, melted and cooled

7. 1 3/4 cups all-purpose flour

8. 1 cup pearl sugar

2. Add eggs and salt and whisk to combine.

3. Add melted butter and whisk to combine.

4. Add flour and mix with a wooden spoon until well combined.

5. Cover the bowl with a damp towel and let the dough rise in a warm place for 1 hour.

7. Add pearl sugar to the dough and mix to combine.

8. Place a heaping spoonful of batter in the center of the waffle iron and close the lid.

What is Pearl Sugar?

If you've ever had Liege waffles or Swedish pearl cakes, you've likely encountered pearl sugar. But what is pearl sugar, and how is it used? Pearl sugar is a type of coarse grain sugar that is used for pastry making. It is made from pure cane sugar that has been refined and then pressurized into large pearl-shaped pieces. The pearl sugar can then be stored at room temperature until use.

When baked, pearl sugar retains its shape and size, which makes it ideal for topping sweets like waffles, cookies, and cakes. It also gives these treats a pleasant crunch. So next time you see pearl sugar in the store, be sure to pick some up for your next baking project!
